This Anaerobic natural processed coffee is from producer Robinson Rivera who has been growing coffee for 18 years and has been part of the ACC group ( Asociacion de Caficultores del Centro del Cauca por La Paz ) for 5 years. The Association work hard to improve both coffee quality in the region and in turn improving the wellbeing of its farmers and surrounding environment.
This lot, from the El Silencio Farm is a funky fruity coffee that really caught our taste buds.
Once ripe, the picked coffee cherries go through a controlled fermenting process, beginning with a 48hour tank fermentation before being silo dried at 28c. Drying is then paused after 16hours and the temperature is raised to 37c until 20% humidity is achieved. A further fermentation is carried out in sealed drums for 24hours before being dried in a controlled environment to achieve the final 10% humidity required before roasting.
We love brewing this coffee and get a lot of fruity notes in the cup. You can expect macerated strawberries and tropical fruit smoothing out to a chocolatey cocoa finish.
