This balanced washed coffee is produced by several small land holders in the Inzá municipality. Inzá can be found in the Tierradentro region located on the western side of Cauca district in Colombia. This region is 80% inhabited by the indigenous tribe called Paeces which has significant influences on the culture and practices of the area. The region boasts fertile volcanic soil and an ideal climate of 16° to 22°, making for optimal growing conditions for coffee plants at 1700-2000 m.a.s.l. The cherries are picked at their prime ripeness, pulped, washed, and then dried on patios in the sun.
These small hold growers have farms averaging 0.5 to 1.5 hectares and grow crops of Caturra and Castillo. These small plots of land are not big enough to produce enough coffee for an entire micro lot. The growers join forces and combine their harvests to create enough volume to be sold to importers. We have worked with Cofinet to source this coffee. They have collaborated with their friends from Occicafe and Globalcafe to create a direct relationship with farmers and have better control on the quality of the coffee.
We are excited to introduce this coffee to our single origin offering. It has juicy green apple acidity, a sweet caramel mouth feel and a well-rounded medium to full body with a cocoa finish. It’s a super versatile coffee, making a smooth sweet espresso but equally a delicious filter coffee.
