Finca Noruega is part of the Los Naranjos group headed by a retired professor of Agronomy, Sigfredo Corado. The farm is part of the Renacer Program ( ‘Reborn’ in Spanish ) which is a technical field school and educational program for coffee producers to learn about better farm management practices. The field technicians help farmers use these practices to maintain the fertility of the soil and environment, whilst also working to improve yield and quality of their coffee.
The technical school is based at Finca Noruega, where 60 students work on test plots to implement their knowledge gained in class. This particular lot of coffee is solely Bourbon variety and has been selectively picked at the farm and then processed at the wet mills and drying beds situated at Beneficio San Rafael, which is nearby between the two hills El Pilon and Cerro Aguila. The cherries are washed and floated for 48hrs before being fermented in barrels for another 48hrs, then laid out to dry for 25-30 days to reach the perfect moisture content.
This coffee is smooth and sweet, with notes of cantaloupe melon firstly, mellowing to the sweet caramel and milk chocolate notes to finish.
