This sweet and well-rounded coffee is everything you would expect from a naturally processed Ethiopian. Clean and fragrant, it boasts notes of earl grey tea, ripe peach, and lively bergamot citrus.
Sookoo coffee was founded by Ture Waji, him and his team have sourced this fantastic coffee lot from the village of Shoondhisa. After harvest the coffee cherry is then sent to the Dambi Uddo drying station, high up in the hills of Shakiso, Guji. This station buys cherry from roughly 100 small-holder farmers. All the cherry that is delivered to Dambi Uddo is separated on delivery by sub-kebele (village) and is fully organic.
While the norm in Latin America is for farmers to have thousands of coffee trees, in Ethiopia, most growers are small land holders averaging a farm size of 2.5 hectares. Whilst larger than the average farm size in Colombia, planting is much less dense and nearly all the production happens within a fully or semi-forested system They often harvest coffee in their gardens, alongside crops for personal/family consumption. This means that there is much lower yield per tree and many fewer trees per hectare.
This coffee is perfect brewed over filter or cafetiere. Expect a light clean cup with smooth sweet notes.
