Colombia has long been known for producing some of the most rounded coffees in the world. The region this coffee comes from is particularly special, being crossed by two Andes mountain rifts, Antioquia benefits from high altitudes and a tropical climate – optimal for growing coffee. Not only is this land perfect, it is also dubbed the ‘birthplace of Colombian coffee’ as it has been cultivated here for upwards of 180 years!
Just as the land this coffee was grown on is special so is the process it has undergone since harvest. Once picked, the cherries are floated to separate those that are over and under-ripe, they are then placed in a tank for 16 hours to begin the fermentation process. After that, they’re moved to a heretic tank where the oxygen is removed and replaced with CO2 which allows a controlled fermentation before being mechanically dried preceding a two-month stabilisation phase.
This is a luminous example of pioneering Colombian coffee, you can expect to taste sweet guava, zingy pineapple, and coconut cream.
