Peru is a staple name for being one of the best producers of organic coffee in the world. The San Ignacio cooperative have championed some incredible coffees and this washed El Oso is certainly one.
Stationed at the top of the Cajamarca region near the border of Ecuador the micro-lots are situated in the buffer zones of protected wildlife areas which makes the region a perfect place to farm organically to remain in keeping with this area of Peru’s goals of wildlife and plant life protection. This cause is not without good reason, the wildlife in this region of Peru is certainly worth protecting. Natural habitat to the spectacled bear, Jaguars and peccaries along with all kinds of rare flora.
This coffee is fermented in barrels made from fallen Romillo trees, then is fully washed, evaluated and tested for quality within the town of San Ignacio before being dried in a town nearby.
